Mother's Day specials and a recipe for you!

Excitingly this weekend is our first ever double day of markets! We are celebrating Mum and have put together exclusive offers from our makers. As an extra treat, we are sharing in this blogpost a decadent recipe for all our beautiful Mums that follow us to tuck away in the recipe book from The Chocolate Cakery.

Sometimes you just need warm fudgy deliciousness! These Chocolate Fudge Muffins fit the bill perfectly. You can melt the fudge if you're feeling energetic or simply stir through small pieces of chopped fudge (my preference) either way you'll have morsels of chocolate heaven in no time. If you want more of a chocolate hit simply replace one tablespoon of SR flour with one tablespoon of cocoa powder. If you want caramel muffins, use caramel fudge, how easy is that! They're just as nice with or without icing, and especially good warm with ice cream. I really hope you enjoy making (and eating) these muffins, they just might become your favourites too! 


Chocolate Fudge Muffins

Ingredients

Muffins
200g SR flour 
1 teaspoon baking powder 
140g chocolate fudge 
3 eggs 
85g melted butter 
30g  brown sugar 

Icing 
60g butter 
30g golden syrup 
2 tablespoon milk 
200g icing sugar 
30g cocoa powder 

Method

To make Muffins

Place fudge in a microwave safe bowl and microwave for 2-3 minutes (or simply chop into small pieces)
Place other ingredients in a separate bowl and whisk until smooth 
Beat in melted fudge (or stir through chopped fudge)
Spoon into 18 mini muffin cases or 7-8 large muffin cases 
Bake at 165 deg C for 10-12 mins for mini muffins or 15-20 minutes for larger ones

To make Icing 

Melt butter, golden syrup and milk together 
Sift cocoa and icing sugar together, mix in liquid ingredients and beat well. Spread or drizzle over muffins, leave until set
